But-3-en-2-one, also known as 2-butenone or methyl vinyl ketone, is a member of the class of compounds known as enones. Enones are compounds containing the enone functional group, with the structure RC(=O)CR'. Thus, but-3-en-2-one is considered to be an oxygenated hydrocarbon lipid molecule. But-3-en-2-one is soluble (in water) and an extremely weak acidic compound (based on its pKa). But-3-en-2-one can be found in a number of food items such as kai-lan, roman camomile, black chokeberry, and orange mint, which makes but-3-en-2-one a potential biomarker for the consumption of these food products. But-3-en-2-one can be found primarily in saliva.
