Sinapic acid, also known as 3,5-dimethoxy-4-hydroxycinnamic acid or sinapinate, is a member of the class of compounds known as hydroxycinnamic acids. Hydroxycinnamic acids are compounds containing an cinnamic acid where the benzene ring is hydroxylated. Sinapic acid is practically insoluble (in water) and a weakly acidic compound (based on its pKa). Sinapic acid is an odorless tasting compound and can be found in a number of food items such as green bean, grapefruit, sugar apple, and shallot, which makes sinapic acid a potential biomarker for the consumption of these food products. Sinapic acid can be found primarily in feces and urine. Sinapinic acid, or sinapic acid (Sinapine - Origin: L. Sinapi, sinapis, mustard, Gr., cf. F. Sinapine.), is a small naturally occurring hydroxycinnamic acid. It is a member of the phenylpropanoid family. It is a commonly used matrix in MALDI mass spectrometry. It is a useful matrix for a wide variety of peptides and proteins. It serves well as a matrix for MALDI due to its ability to absorb laser radiation and to also donate protons (H+) to the analyte of interest .
