Ascorbic acid, also known as ascorbate, is a member of the class of compounds known as butenolides. Butenolides are dihydrofurans with a carbonyl group at the C2 carbon atom. Ascorbic acid is soluble (in water) and a weakly acidic compound (based on its pKa). Ascorbic acid can be found in nanking cherry, which makes ascorbic acid a potential biomarker for the consumption of this food product.
