4-hydroxycinnamic acid, also known as P-coumaric acid or trans-P-hydroxycinnamate, is a member of the class of compounds known as hydroxycinnamic acids. Hydroxycinnamic acids are compounds containing an cinnamic acid where the benzene ring is hydroxylated. 4-hydroxycinnamic acid is slightly soluble (in water) and a weakly acidic compound (based on its pKa). 4-hydroxycinnamic acid can be found in a number of food items such as common sage, spearmint, strawberry, and ginger, which makes 4-hydroxycinnamic acid a potential biomarker for the consumption of these food products. 4-hydroxycinnamic acid can be found primarily in blood, feces, and urine, as well as in human fibroblasts tissue. 4-hydroxycinnamic acid exists in all eukaryotes, ranging from yeast to humans. p-Coumaric acid is a hydroxycinnamic acid, an organic compound that is a hydroxy derivative of cinnamic acid. There are three isomers of coumaric acid—o-coumaric acid, m-coumaric acid, and p-coumaric acid—that differ by the position of the hydroxy substitution of the phenyl group. p-Coumaric acid is the most abundant isomer of the three in nature. p-Coumaric acid exists in two forms trans-p-coumaric acid and cis-p-coumaric acid .
