Isopropylmaleate, also known as 2-isopropylmaleic acid, is a member of the class of compounds known as methyl-branched fatty acids. Methyl-branched fatty acids are fatty acids with an acyl chain that has a methyl branch. Usually, they are saturated and contain only one or more methyl group. However, branches other than methyl may be present. Isopropylmaleate is slightly soluble (in water) and a moderately acidic compound (based on its pKa). Isopropylmaleate can be found in a number of food items such as pulses, common oregano, agave, and european chestnut, which makes isopropylmaleate a potential biomarker for the consumption of these food products. Isopropylmaleate exists in all living species, ranging from bacteria to humans.
