Phosphatidylcholines are glycerophosphocholines in which the two free -OH are attached to one fatty acid each through an ester linkage. 1-18:1-2-18:1-sn-glycerol-3-phosphocholine is practically insoluble (in water) and a moderately acidic compound (based on its pKa). 1-18:1-2-18:1-sn-glycerol-3-phosphocholine can be found in a number of food items such as highbush blueberry, scarlet bean, american pokeweed, and fenugreek, which makes 1-18:1-2-18:1-sn-glycerol-3-phosphocholine a potential biomarker for the consumption of these food products.
