Glycosyldiacylglycerols are diacylglycerols that carry a saccharide moiety linked to the glycerol. 1-18:1-2-16:2-monogalactosyldiacylglycerol is practically insoluble (in water) and a very weakly acidic compound (based on its pKa). 1-18:1-2-16:2-monogalactosyldiacylglycerol can be found in a number of food items such as macadamia nut (m. tetraphylla), millet, gram bean, and wax gourd, which makes 1-18:1-2-16:2-monogalactosyldiacylglycerol a potential biomarker for the consumption of these food products.
