Astringin is a member of the class of compounds known as stilbene glycosides. Stilbene glycosides are compounds structurally characterized by the presence of a carbohydrate moiety glycosidically linked to the stilbene skeleton. Astringin is practically insoluble (in water) and a very weakly acidic compound (based on its pKa). Astringin can be found in grape wine, which makes astringin a potential biomarker for the consumption of this food product. Astringin is a stilbenoid, the 3-β-D-glucoside of piceatannol. It can be found in the bark of Picea sitchensis or Picea abies (Norway spruce) .
