Geraldone, also known as 5-deoxychrysoeriol or 7,4'-dihydroxy-3'-methoxyflavone, is a member of the class of compounds known as 3'-o-methylated flavonoids. 3'-o-methylated flavonoids are flavonoids with methoxy groups attached to the C3' atom of the flavonoid backbone. Thus, geraldone is considered to be a flavonoid lipid molecule. Geraldone is practically insoluble (in water) and a very weakly acidic compound (based on its pKa). Geraldone can be found in broad bean, which makes geraldone a potential biomarker for the consumption of this food product.
